Low Fat Chicken Recipes – I’m Expanding My Horizons

I have been having a fun time writing about my low fat chicken recipes, but I am kinda running out of recipes.  I have a bunch more, but I think I’d like to highlight my original stuff more on my new, more personalized site Pretty Healthy Dinners.

On this site I will be telling about my own personal experiences with making some dinners that are “pretty healthy”, but also, pretty darn delicious!  I have had my friends and family tell me over and over how I am crazy to try and put vegetables in pretty much everything I make.  Well, my reasoning is that when I’m following Weight Watchers (TM), most vegetables are FREE and the rest, including fruits are like a point.  In my world, that ROCKS!  Why not make a meal that you can eat more of, so you can actually feel full?

Thai Lettuce Wraps – Low Fat Chicken Recipes

 My husband and I went to the Cheesecake Factory for Valentine’s Day this year, and eventhough I am a devout fan of the Chicken Madeira, I decided to try something a bit different.  We asked the waiter what were some of the most popular items on the menu, and he  almost immediately pointed out the Thai Lettuce Wraps.  We commented how it was only an appetizer, but he assured us we wouldn’t be sorry, OR hungry… as long as we still got cheesecake for dessert!  hehe

I guess you have figured out that the medly of flavors in this meal has jumped to one of my top ten low fat chicken recipes.  My kids even like it, as long as they get to make their own — seriously, what fun is eating a wrap if you don’t get to build it yourself!?

I have posted a video on YouTube, so you’ll see how I make it.  As far as Weight Watchers Points (TM), I figure it’s between 1 and 2 points per wrap, if you make it with the amount of stuff that I do on the video.  You’ll want to make these wraps all the time because it feels like you get to eat a LOT of food.  Yum. Yum. :)

Thai Lettuce Wraps

 

  • 1 pound cooked chicken
  • 1 Tbsp lime juice
  • 2 Tbsp soy sauce
  • Lettuce (any kind for salad, or bibb, Boston, or butter for wraps)
  • 1 pkg bean sprouts
  • 2 cucumbers (peeled and sliced)
  • 2 Tbsp sugar or Splenda
  • 1/4 cup vinegar
  • 2 carrots (shredded)
  • 1 pkg Oriental Ramen Noodles (drained then seasoned)

 

Peanut Sauce

 

  • 1/4 cup peanut butter
  • 2 Tbsp water
  • 2 tsp sugar
  • 1 Tbsp soy sauce
  • 1 tsp vinegar
  • 1 tsp lime juice
  • 1/2 tsp chili oil

Oriental Chicken Salad – Low Fat Chicken Recipes

This is really delicious.  My mom adopted the recipe from my aunt.  We often make it at bridal showers or baby showers because almost everyone loves it.

You are welcome to omit the oil or only use half as much, and replace the missing oil with water.  Also, Ramen noodles can be high in calories, but if you consider how many servings this recipe makes, there’s not too much of a problem.

  •  6 pkgs Ramen noodles (oriental
    flavor), broken up
  • 1 pkg sliced almonds

Toast these in a broiler on a cookie sheet. 

  • 2 large heads of cabbage,
    chopped finely
  • 2 bunches of green onions,
    sliced
  • 1 pound of cooked, cubed
    chicken or turkey 

Mix all of the above together.

Stir the following together to make the sauce/dressing:

  •  6 pkgs oriental flavoring from
    the Ramen noodles
  • 4 Tbsp apple cider vinegar
  • 4 Tbsp soy sauce
  • 1½ cups oil (I substitute ½
    water)
  • 6 to 8 pkgs Equal or sugar or splenda to
    taste

Mix well; pour over salad and stir. This makes a LARGE salad. 
Half of the recipe just about fills the largest white with blue lid Tupperware
bowl.

White Chili – Low Fat Chicken Recipes

…a TRUE family favorite.  Just typing this makes me want to run to the store right now, so I can make this for dinner tomorrow!

White Chili

  • 2 large boneless, skinless chicken breasts

Boil for 1 hour.  Remove the chicken and cut off and discard the fat.  Using kitchen shears, cut chicken into bite-size pieces and put back into water.  Add the following ingredients:

  • 2 can green chiles
  • 2 yellow bell peppers
  • 1 large onion
  • 4 cans of any white beans, undrained (white, navy, chickpeas, giant, lima, etc.)
  • 1 Tbsp cumin
  • salt and pepper to taste

Bring to a boil, then cover and turn down heat to medium/low until onions and peppers are cooked (about an hour).  It’s white chili!  1 point per cup in Weight Watchers (TM) land.  (*My sister adds 1 block of cream cheese to the concoction to make it creamy.  If you use the 1/3 less fat kind, then it will make the soup about 2 points per cup.)

Now if you’d like to make this the best meal on Earth, then dish up your soup and “decorate” with the following ingredients (but don’t forget to count the extra calories):

  • avocado
  • lime juice
  • a few crushed chips (baked are always healthier!)
  • cilantro
  • fat-free sour cream
  • shredded montery jack cheese

I really hope you like this as much as we like our other low fat chicken recipes.  We actually came up with this when we introduced “white chili” to “taco soup” and they hooked up.  In fact, maybe when you comment, you can suggest a new name that appropriately describes the party in your mouth when you give this a taste.  Enjoy!!

Stuffed Peppers – Low Fat Chicken Recipes

Who like peppers?  I do! I do!  Not everyone does, though, but after you invite your picky friends over for this meal, they will certainly change their minds…

Stuffed Peppers

Brown these in a large skillet (I use a big Wok pan) with a few dashes of salt and pepper.  Add the following with the heat on high:

  • 1 large can of chopped stewed tomatoes, with juice
  • 1/2 cup uncooked rice
  • 2 tsp oregano or basil
  • 2 tbsp worcestershire sauce
  • 3/4 cup water

And for the secret ingredient…………….

  • 4 zucchini squash or yellow crook-neck squash or a combo of both, finely chopped

Bring to a boil, then cover and simmer on medium/low for 20 minutes.  While that is cooking, get the peppers ready:

  • 4 bell peppers (green have the most peppery flavor, red is sweeter, yellow is the mildest)

Cut peppers in half and remove the stem and seeds.  Proceed to cut in lengthwise strips.  Steam the peppers in the microwave by placing in a microwave-safe dish, adding approx. 1/4 cup water, and cover and cook for 7-10 minutes.  When the peppers are done, spread out in the bottom of a 9×13 pan.  After the meat sauce is done, spoon into the pan.  Finally, spread…

  • 1 cup grated cheese

…all over the top.  Bake at 350 degrees for 20-30 minutes, just until hot and ready for serving.

 

SOOOO…. the Points (TM).  This recipe comes out to be about 40 points for the entire recipe.  This makes 8 servings, so it’s only 5 points per serving.  You get to eat a lot, so it’s like one of the best low fat chicken recipes I know.

And what do you think about all that squash?  Weird, eh?  It totally takes on the flavors of the recipe, and when you’re eating it, you can’t even tell it’s there.  It’s amazing.  My kids LOVE the “meat goo”, and they’ll eat the peppers, too, like the peppers make it actually taste better or something. ;)

How to Make Your Own Ground Turkey or Chicken – Low Fat Chicken Recipes

This is simple, and so economical…

1. Buy some poultry.

2. Debone and cut off the fat with kitchen shears. (I prefer to buy boneless, skinless chicken breasts)

3. Grind the meat in a food processor. (This is an item that is well-worth the investment.  I paid $40 for mine at Wal-Mart)

4. Now when you cook the ground turkey or chicken in a skillet, cook it with a chopped up onion and some salt and pepper.  Add garlic powder and a bit of low-sodium soy sauce if you need more flavor.

Chicken Salad with Olive Oil Mayo – Low Fat Chicken Recipes

This is quite simple.  We’ve all made chicken salad from a slew of low fat chicken recipes, but I bet there are a lot of you out there who have not tried it with the new Kraft Olive Oil Mayonnaise.  It’s “the bomb dot com” (as my niece says)!

Just mix the following together:

  • cooked chicken breast, chopped finely
  • celery, chopped finely
  • a few craisins, chopped a bit
  • a few walnuts, chopped a bit
  • olive oil mayo, enough to make it moist

That is it!  You can serve this on that super, pillow-soft low-cal bread.  You can have it on toast.  It’s great wrapped in a tortilla with lettuce.  It’s delightful with baked pita chips or crackers.

It’ll be good no matter how you serve it.  You just gotta make it with that mayo ….enough said.
