Low Fat Chicken Recipes – I’m Expanding My Horizons

Posted by admin on Sep 15, 2009

I have been having a fun time writing about my low fat chicken recipes, but I am kinda running out of recipes.  I have a bunch more, but I think I’d like to highlight my original stuff more on my new, more personalized site Pretty Healthy Dinners.

On this site I will be telling about my own personal experiences with making some dinners that are “pretty healthy”, but also, pretty darn delicious!  I have had my friends and family tell me over and over how I am crazy to try and put vegetables in pretty much everything I make.  Well, my reasoning is that when I’m following Weight Watchers (TM), most vegetables are FREE and the rest, including fruits are like a point.  In my world, that ROCKS!  Why not make a meal that you can eat more of, so you can actually feel full?

Anyway, check out my site.  It is BRAND BRAND new, so please check back weekly to see what new stuff I have added.

Laterz!

White Chili – Low Fat Chicken Recipes

Posted by admin on Aug 23, 2009

…a TRUE family favorite.  Just typing this makes me want to run to the store right now, so I can make this for dinner tomorrow!

White Chili

  • 2 large boneless, skinless chicken breasts

Boil for 1 hour.  Remove the chicken and cut off and discard the fat.  Using kitchen shears, cut chicken into bite-size pieces and put back into water.  Add the following ingredients:

  • 2 can green chiles
  • 2 yellow bell peppers
  • 1 large onion
  • 4 cans of any white beans, undrained (white, navy, chickpeas, giant, lima, etc.)
  • 1 Tbsp cumin
  • salt and pepper to taste

Bring to a boil, then cover and turn down heat to medium/low until onions and peppers are cooked (about an hour).  It’s white chili!  1 point per cup in Weight Watchers (TM) land.  (*My sister adds 1 block of cream cheese to the concoction to make it creamy.  If you use the 1/3 less fat kind, then it will make the soup about 2 points per cup.)

Now if you’d like to make this the best meal on Earth, then dish up your soup and “decorate” with the following ingredients (but don’t forget to count the extra calories):

  • avocado
  • lime juice
  • a few crushed chips (baked are always healthier!)
  • cilantro
  • fat-free sour cream
  • shredded montery jack cheese

I really hope you like this as much as we like our other low fat chicken recipes.  We actually came up with this when we introduced “white chili” to “taco soup” and they hooked up.  In fact, maybe when you comment, you can suggest a new name that appropriately describes the party in your mouth when you give this a taste.  Enjoy!!

How to Make Your Own Ground Turkey or Chicken – Low Fat Chicken Recipes

Posted by admin on Aug 23, 2009

This is simple, and so economical…

1. Buy some poultry.

2. Debone and cut off the fat with kitchen shears. (I prefer to buy boneless, skinless chicken breasts)

3. Grind the meat in a food processor. (This is an item that is well-worth the investment.  I paid $40 for mine at Wal-Mart)

4. Now when you cook the ground turkey or chicken in a skillet, cook it with a chopped up onion and some salt and pepper.  Add garlic powder and a bit of low-sodium soy sauce if you need more flavor.

Chicken Madeira (Cheesecake Factory Style!) – Low Fat Chicken Recipes

Posted by admin on Aug 20, 2009

If you have a Cheesecake Factory in your area, and you haven’t been yet, you MUST go!  The first time I went to this restaurant, I was shocked at the length of their menu.  They make everything!  Well, not everything, but everything good!

Now if you can’t decide what you want to try because there are just way too many choices, then order the Chicken Madeira.  It is probably my favorite restaurant meal that exists.  It is wonderful.

If you are counting calories, don’t go there.  Go there on your birthday… the ONE time a year that you’re going to cheat, right?  ;)   It’s actually not unrealistic to eat there, if you can stand to skip all the meals the rest of the day.  The meal is 24 Weight Watchers (TM) points, so, for me, it’s a bit over my daily minimum, and this Cheesecake Factory Chicken Madeira recipe is so perfectly perfect, that if I were rich, I’d eat it every Friday night for the rest of my live.

…..

………..back to reality, though.  I was lucky enough to find a copycat recipe for this meal on the Net.  It’s from RecipeZaar.  Just because it’s homemade, however, doesn’t mean that it’s one of the low fat chicken recipes.  I have some recommendations about how to make it become one of the low fat and healthy chicken recipes.  Also, FYI, I am known well among my family and friends to modify almost ANY recipe to make it more “friendly”, and most of them turn out pretty yummy, so let’s give this a shot…

Original Ingredients

  • 1 tablespoon olive oil   <———- Use a couple spritzes of cooking spray.  The oil taste will get covered up anyway.
  • 4 boneless skinless chicken breasts    <———- Excellent.
  • 8 asparagus spears    <———— Fresh is much tastier than canned.
  • 4 slices mozzarella cheese <———–  You can buy fat-free, but personally, I would buy the Lower-calorie cheesesticks.  You cannot taste the difference.

Original Madeira Sauce

  • 2 tablespoons olive oil  <———- I would omit this entirely, and cook the mushrooms in the butter from later.
  • 2 cups sliced fresh mushrooms  <———- Awesome.
  • 3 cups madeira wine  <——– LOTS of the calories come from this, so I found info on substitution (When I make a video of this, I’ll let you know what I try.  I think it will be chicken stock and balsamic vinegar.)
  • 2 cups beef stock  <———– Buy fat-free, or make it from boulion cubes or powder.
  • 1 tablespoon butter  <———- Use this to cook the mushrooms.
  • 1/4 teaspoon ground black pepper  <———– Yum.

So, if anyone tries this (click here for the full recipe), please commment and let us know how it turns out!  Also, I am estimating that if you follow my recommendations, this four-serving recipe will amount to about 5 Weight Watchers (TM) points per serving.  Now that’s one of the low fat chicken recipes I’m talkin’ about!
