Chicken Madeira (Cheesecake Factory Style!) – Low Fat Chicken Recipes

If you have a Cheesecake Factory in your area, and you haven’t been yet, you MUST go! The first time I went to this restaurant, I was shocked at the length of their menu. They make everything! Well, not everything, but everything good!
Now if you can’t decide what you want to try because there are just way too many choices, then order the Chicken Madeira. It is probably my favorite restaurant meal that exists. It is wonderful.
If you are counting calories, don’t go there. Go there on your birthday… the ONE time a year that you’re going to cheat, right?
It’s actually not unrealistic to eat there, if you can stand to skip all the meals the rest of the day. The meal is 24 Weight Watchers (TM) points, so, for me, it’s a bit over my daily minimum, and this Cheesecake Factory Chicken Madeira recipe is so perfectly perfect, that if I were rich, I’d eat it every Friday night for the rest of my live.

………..back to reality, though. I was lucky enough to find a copycat recipe for this meal on the Net. It’s from RecipeZaar. Just because it’s homemade, however, doesn’t mean that it’s one of the low fat chicken recipes. I have some recommendations about how to make it become one of the low fat and healthy chicken recipes. Also, FYI, I am known well among my family and friends to modify almost ANY recipe to make it more “friendly”, and most of them turn out pretty yummy, so let’s give this a shot…
Original Ingredients
- 1 tablespoon olive oil <———- Use a couple spritzes of cooking spray. The oil taste will get covered up anyway.
- 4 boneless skinless chicken breasts <———- Excellent.
- 8 asparagus spears <———— Fresh is much tastier than canned.
- 4 slices mozzarella cheese <———– You can buy fat-free, but personally, I would buy the Lower-calorie cheesesticks. You cannot taste the difference.
Original Madeira Sauce
- 2 tablespoons olive oil <———- I would omit this entirely, and cook the mushrooms in the butter from later.
- 2 cups sliced fresh mushrooms <———- Awesome.
- 3 cups madeira wine <——– LOTS of the calories come from this, so I found info on substitution (When I make a video of this, I’ll let you know what I try. I think it will be chicken stock and balsamic vinegar.)
- 2 cups beef stock <———– Buy fat-free, or make it from boulion cubes or powder.
- 1 tablespoon butter <———- Use this to cook the mushrooms.
- 1/4 teaspoon ground black pepper <———– Yum.

Also, I am estimating that if you follow my recommendations, this four-serving recipe will amount to about 5 Weight Watchers (TM) points per serving. Now that’s one of the low fat chicken recipes I’m talkin’ about!
