I have been having a fun time writing about my low fat chicken recipes, but I am kinda running out of recipes. I have a bunch more, but I think I’d like to highlight my original stuff more on my new, more personalized site Pretty Healthy Dinners.
On this site I will be telling about my own personal experiences with making some dinners that are “pretty healthy”, but also, pretty darn delicious! I have had my friends and family tell me over and over how I am crazy to try and put vegetables in pretty much everything I make. Well, my reasoning is that when I’m following Weight Watchers (TM), most vegetables are FREE and the rest, including fruits are like a point. In my world, that ROCKS! Why not make a meal that you can eat more of, so you can actually feel full?

Thai Lettuce Wraps – Low Fat Chicken Recipes

My husband and I went to the Cheesecake Factory for Valentine’s Day this year, and eventhough I am a devout fan of the Chicken Madeira, I decided to try something a bit different. We asked the waiter what were some of the most popular items on the menu, and he almost immediately pointed out the Thai Lettuce Wraps. We commented how it was only an appetizer, but he assured us we wouldn’t be sorry, OR hungry… as long as we still got cheesecake for dessert! hehe
I guess you have figured out that the medly of flavors in this meal has jumped to one of my top ten low fat chicken recipes. My kids even like it, as long as they get to make their own — seriously, what fun is eating a wrap if you don’t get to build it yourself!?
I have posted a video on YouTube, so you’ll see how I make it. As far as Weight Watchers Points (TM), I figure it’s between 1 and 2 points per wrap, if you make it with the amount of stuff that I do on the video. You’ll want to make these wraps all the time because it feels like you get to eat a LOT of food. Yum. Yum.
Thai Lettuce Wraps
- 1 pound cooked chicken
- 1 Tbsp lime juice
- 2 Tbsp soy sauce
- Lettuce (any kind for salad, or bibb, Boston, or butter for wraps)
- 1 pkg bean sprouts
- 2 cucumbers (peeled and sliced)
- 2 Tbsp sugar or Splenda
- 1/4 cup vinegar
- 2 carrots (shredded)
- 1 pkg Oriental Ramen Noodles (drained then seasoned)
Peanut Sauce
- 1/4 cup peanut butter
- 2 Tbsp water
- 2 tsp sugar
- 1 Tbsp soy sauce
- 1 tsp vinegar
- 1 tsp lime juice
- 1/2 tsp chili oil

Oriental Chicken Salad – Low Fat Chicken Recipes

This is really delicious. My mom adopted the recipe from my aunt. We often make it at bridal showers or baby showers because almost everyone loves it.
You are welcome to omit the oil or only use half as much, and replace the missing oil with water. Also, Ramen noodles can be high in calories, but if you consider how many servings this recipe makes, there’s not too much of a problem.
- 6 pkgs Ramen noodles (oriental
flavor), broken up - 1 pkg sliced almonds
- 2 large heads of cabbage,
chopped finely - 2 bunches of green onions,
sliced - 1 pound of cooked, cubed
chicken or turkey
Mix all of the above together.
- 6 pkgs oriental flavoring from
the Ramen noodles - 4 Tbsp apple cider vinegar
- 4 Tbsp soy sauce
- 1½ cups oil (I substitute ½
water) - 6 to 8 pkgs Equal or sugar or splenda to
taste
Half of the recipe just about fills the largest white with blue lid Tupperware
bowl.
Chicken Taco Salad – Low Fat Chicken Recipes

I simply can’t end my first day of the blog without including the recipe for chicken taco salad. It is my mom’s favorite meal in the universe to make for our family get-togethers. It is the ultimate of all chicken salad recipes.
***This recipe has it all: easy, cheap, fast, delicious, low-fat***
Chicken Taco Salad
(Here’s the rundown on how to “throw” it together because I plan to add a video on this very soon.)
1. Pre-cook some chicken (I prefer to boil skinless boneless chicken breasts for over an hour, so they’ll pull apart with a fork.)
2. Prepare the chicken (Shred chicken and heat with 1 packet taco seasoning and half the amount of water required on the packet directions.)
3. Prepare the dressing (1 tub fat-free sour cream mixed with 1/2 cup salsa, 1 to 2 tsp. chili powder, and enough milk to make it pourable… approx. 1/4 cup)
4. Build your salad!
I recommend at least some of the following ingredients:
Romaine or Greenleaf lettuce
Chicken
Cheese
Tomatoes
Avocado (a must!)
Black or Kidney beans (another must!)
Green onions
Olives
Crushed tortilla chips (some people like ‘em on the bottom, some like ‘em on the top)
Dressing, salt, and pepper

Most of these recipes with chicken will come from straight from my home to yours. I want to share the tried and true meals that my family loves, while I am on Weight Watchers (TM). I can attest that all the recipes I provide from my own kitchen have low Points (TM) values, but they taste awesome!
If you’re anything like me, you make the same ten meals over and over again, so please don’t be surprised when the first several low fat chicken recipes on here are my very favorite ones. I am also going to include some of my other dinners that we frequently make, and include info on how to make pretty much the same flavor, so they’ll become healthy chicken recipes…
…because you most-likely landed here because you have a family pack of chicken breast thawing in the fridge, with no plans for what you actually want to make with it.
