White Chili – Low Fat Chicken Recipes

…a TRUE family favorite.  Just typing this makes me want to run to the store right now, so I can make this for dinner tomorrow!

White Chili

  • 2 large boneless, skinless chicken breasts

Boil for 1 hour.  Remove the chicken and cut off and discard the fat.  Using kitchen shears, cut chicken into bite-size pieces and put back into water.  Add the following ingredients:

  • 2 can green chiles
  • 2 yellow bell peppers
  • 1 large onion
  • 4 cans of any white beans, undrained (white, navy, chickpeas, giant, lima, etc.)
  • 1 Tbsp cumin
  • salt and pepper to taste

Bring to a boil, then cover and turn down heat to medium/low until onions and peppers are cooked (about an hour).  It’s white chili!  1 point per cup in Weight Watchers (TM) land.  (*My sister adds 1 block of cream cheese to the concoction to make it creamy.  If you use the 1/3 less fat kind, then it will make the soup about 2 points per cup.)

Now if you’d like to make this the best meal on Earth, then dish up your soup and “decorate” with the following ingredients (but don’t forget to count the extra calories):

  • avocado
  • lime juice
  • a few crushed chips (baked are always healthier!)
  • cilantro
  • fat-free sour cream
  • shredded montery jack cheese

I really hope you like this as much as we like our other low fat chicken recipes.  We actually came up with this when we introduced “white chili” to “taco soup” and they hooked up.  In fact, maybe when you comment, you can suggest a new name that appropriately describes the party in your mouth when you give this a taste.  Enjoy!!
