Thai Lettuce Wraps – Low Fat Chicken Recipes

 My husband and I went to the Cheesecake Factory for Valentine’s Day this year, and eventhough I am a devout fan of the Chicken Madeira, I decided to try something a bit different.  We asked the waiter what were some of the most popular items on the menu, and he  almost immediately pointed out the Thai Lettuce Wraps.  We commented how it was only an appetizer, but he assured us we wouldn’t be sorry, OR hungry… as long as we still got cheesecake for dessert!  hehe

I guess you have figured out that the medly of flavors in this meal has jumped to one of my top ten low fat chicken recipes.  My kids even like it, as long as they get to make their own — seriously, what fun is eating a wrap if you don’t get to build it yourself!?

I have posted a video on YouTube, so you’ll see how I make it.  As far as Weight Watchers Points (TM), I figure it’s between 1 and 2 points per wrap, if you make it with the amount of stuff that I do on the video.  You’ll want to make these wraps all the time because it feels like you get to eat a LOT of food.  Yum. Yum. :)

Thai Lettuce Wraps

 

  • 1 pound cooked chicken
  • 1 Tbsp lime juice
  • 2 Tbsp soy sauce
  • Lettuce (any kind for salad, or bibb, Boston, or butter for wraps)
  • 1 pkg bean sprouts
  • 2 cucumbers (peeled and sliced)
  • 2 Tbsp sugar or Splenda
  • 1/4 cup vinegar
  • 2 carrots (shredded)
  • 1 pkg Oriental Ramen Noodles (drained then seasoned)

 

Peanut Sauce

 

  • 1/4 cup peanut butter
  • 2 Tbsp water
  • 2 tsp sugar
  • 1 Tbsp soy sauce
  • 1 tsp vinegar
  • 1 tsp lime juice
  • 1/2 tsp chili oil
